Sherry: A Spectrum of Style, Aged to Perfection in Spain Sherry is one of the world's most versatile and complex fortified wines, originating exclusively from the Jerez region of Andalusia, Spain. Made primarily from the Palomino grape, Sherry is defined by its unique production and aging methods, which allow it to achieve styles ranging from bone-dry and crisp to dark and lusciously sweet. The Unique Solera System: The hallmark of Sherry is the solera system, a traditional method of fractional blending. This process involves moving younger wines down through barrels (known as criaderas) to be blended with the oldest wines at the base (the solera). This ensures a consistent style and quality year after year. Key Sherry Styles: Crisp and Dry (Aged under Flor): Fino and Manzanilla are light and savoury, aged biologically under a protective layer of yeast called flor. Nutty and Complex: Amontillado starts as a Fino but undergoes further oxidative aging, while Oloroso is aged entirely without flor, resulting in a darker, richer, nutty flavour. Rich and Sweet: Pedro Ximénez (PX) is made from sun-dried grapes, creating a thick, intensely sweet, dessert-style Sherry with notes of dried fruit and molasses.
