The Port process begins similarly to regular wine, but while the grape juice is still fermenting, a neutral grape spirit (brandy) is added. This action immediately halts fermentation, preserving the natural residual sugar and creating a characteristically rich and sweet wine. The fortification process also raises the alcohol content, typically ranging between 19% and 22% ABV.
