This Southern Rhone wine region is famous for the galets roules or 'pudding stones ' covering the ground allowing for heat retention to help enhance ripening of the grapes in the vineyards.

Fermentation takes 3 weeks with strict temperature control at a maximum of 30ºC so that all the freshness of the red fruits is preserved. Pumping-over takes place twice a day during the first 2 weeks and once a day for the final week to keep some elegance. Ageing on the lees is practised in barrel.

The grenache character predominates on the nose with plenty of raspberry fruit. A succulent attack is balanced by fine tannins and good acidity. The finish is marked by spice and blackcurrant.

Food Matching: Very versatile due the fine tannins and fresh fruitiness. Try it with chicken in mushroom or red wine sauce, or with a barbeque. For the veggies out there, this goes excellently with cheese and tomoato omlette or a leek and onion quiche.
