The Captain Morgan recipe begins in the Caribbean, where for centuries the locals have been harvesting sugar cane and squeezing out the delicious contents called molasses. This is then fermented, distilled, and aged depending on the distiller's aims. White rum is aged for only a short time and is popular in Puerto Rico, whereas the dark stuff we find here is aged for much longer to increase its oaky richness.
